Potty Dance Party

Awhile back we bought Max a Sesame Street potty that has a button on the side that you push when you go potty.  Max was all about his potty.  He loved sitting on it, but would never do anything.  He'd then proudly yell, "All done!"  Umm...kid you didn't do anything to be "all done".   This morning was a different story.  Max used the potty!!  We had a dance party to celebrate this big boy event!  Then he pushed the button and yelled, "All done!"  Hopefully our dancing didn't scare him into not wanting to use the potty again.  :)

10 Day Challenge

Oh, I love when blogs do link ups.  I find them to be so fun.  My friend Jessa over at Life of a Sports Wife is doing the challenge, and I decided I wanted in on the fun as well!  It's suppose to be every Thursday, but I'm a day late.  Oh well!    For this week it's 10 secrets about yours truly....so away we go!!

1.  I love chocolate.  By love I mean I have it in some form almost every day.  It might be homemade Reese's PB Cup, or a few chocolate chips.  If it's chocolate...Yum!
2. I have a Keurig, which makes me coffee is about 10 seconds, but I occasionally still buy Starbucks.  Umm hello, pumpkin spice latte. 
3.  I bite my nails.  It's a gross habit, but when I'm nervous I can't help it.
4.  I  have a love for General Hospital.  I know it's a cheesy soap opera that is so predictable, but I LOVE it.  (Jason needs to hurry and figure out that Sam's baby is alive and that Elizabeth is a dirty hooker for changing the bloodwork results AND he's the father!!)
5.  I hated reading until I was in 5th grade.  Then I started reading Sweet Valley Twins, and I've loved reading ever since.   I really love reading books from authors that aren't well known.  My fav is Karice Bolton.
6.  When I was younger (like 7 or 8) my cousin Janee and I called 911.  We said there was some emergency about Mickey Mouse.  We got in trouble.
7.  I was on Bill Nye the Science Guy when I was in 9th grade.  I use to be embarrassed about this fact, but realized when I was older that the experience was pretty cool.  I have the episode on dvd and can't wait to show Max how not cool I was when I was in 9th grade.
8.  I'm a pretty indecisive person.  If there was a place called I Don't Know, Ian and I would be going there all the time. 
9.  I don't like confrontation especially when it comes to close friends.  I tend to hold things in until one day I snap.  When that days comes...watch out.  I know it's bad.  I'm well aware of this...maybe when I'm 30 I'll handle things better.
10.  I get lost easily.  I get all turned around when I'm in a building and get lost.  I once got lost in Allsups (a convenience store for those of you who sadly don't know what an Allsups is).  There were like 6 aisles total in the store and I was looking at the candy and my mom went off to get something else.  I couldn't find her, and it was terrible.  I think I was scarred for life.

Oh Where, Oh Where....

have I gone you ask?  I'm here! I'm here!  I don't really have anything exciting/interesting/I gotta share right away on my blog type of stories for you.  We've been a busy family, I've had doctors appointments, more blood was taken (ouch! left a bruise), and I started substitute teaching.  I'm patiently waiting for September to come to an end because we have a fun filled October ahead!  We have a couple exciting trips, which I will overload you with tons of pictures.  We get to see my whole family (dad's side) and Ian's whole family (dad's side).  Ah! I'm so excited!  This is even better than when I saw Nsync in concert, met Giada de Laurentiis, and Shane Doan said hi to me all rolled into one exciting moment! Do you get how excited I am?!

I hope you, yes you, are having a fabulous September.  I hope Fall treats you kindly.  If you live where it's still way too hot for it to be fall, I hope it gets cooler for you.  If you live where it's already getting chilly....well I'm jealous of you and don't want to hear about your weather.  I hope you are happy, healthy, and enjoying life.

Home Depot

Today Max and I ventured out to Home Depot.  I'm on a mission to repaint our master bedroom.  So I went to go get some sample containers of paint.  While we waited for our paint to be mixed up, Max and I walked around.  Max loved the lawn mowers, and said, "Woooow!" after each one we passed.  Then we walked by the drills.  The squeals of excitement were contagious.  I was getting excited about showing him all these things that I didn't really care about, until seeing it through Max's eyes that is.  Who knew Home Depot could be so exciting?!


Yummy Mummy Kitchen

I have been a meat eater all my life...well minus the two weeks in 9th grade when I wanted to be a vegetarian, but wasn't eating at all.  I fainted in church, and it was super embarrassing.   So I went back to eating like I always had.  The past few weeks that I've been flirting with being a vegetarian.  I don't know what to cook.  I make Max and Ian something, and then myself something.   I bought tofu, but I'm not gonna lie, I'm scared to open the package.  I don't want to be grossed out with it before I even attempt to make something with it.   So if any of you have an awesome tofu recipe,  let me know!!

Last night I was on Pinterest, which I seem to pin more than actually trying to complete some crafty project or yummy dish.  One of my friends pinned butternut squash black bean enchiladas.  Say that 3 times fast.  I've never had butternut squash, but I was determined to try it.  It's from the blog Yummy Mummy Kitchen.  This blog is amazing and my new obsession.  The food recipes are awesome!

This morning before any of the football games started Max and I ventured to Target and got all the ingredients for this yummy looking dish.  We of course got heckled for our attire.  Steelers shirts.  Oh Cardinals fans are so nice.  How they couldn't be dazzled by Max's cuteness in his Polamalu jersey is just wrong.  Do they not have a soul?  We got what we needed including a pumpkin spice latte, and came home. 

The enchiladas are super easy to make, and since I'm the only one that will be eating these I ended up freezing half of the butternut squash black bean filling.   I'm pretty excited about the dish I made, and I hope it taste as good as it smells!!

2 1/2 cups 1/2-inch cubed butternut squash (12-ounces, or about 1 small-medium peeled, seeded squash)
1 tablespoon extra virgin olive oil
15 ounces cooked or canned black beans, drained and rinsed
1/4 cup chopped yellow onion
1 1/2 tablespoons chopped cilantro, plus more cilantro for garnish
12 ounces jarred or fresh mild green salsa
1/4 cup 2% plain Greek yogurt (such as Chobani)
1 1/2 cups shredded Mexican cheese blend
8 corn tortillas  (I used the smaller ones, but I think the larger tortillas would be easier) 
1 large ripe avocado, peeled, pitted, and sliced
1 cup low fat sour cream  (I didn't use sour cream)

Preheat oven to 400 degrees F. Place cubed butternut squash on a large baking pan. Drizzle with olive oil and season lightly with salt and pepper. Toss to coat. Roast for 20 minutes or until tender. Reduce heat to 350 degrees F.

In a medium bowl, stir together roasted butternut squash, beans, chopped onion, and cilantro. In another medium bowl, stir together salsa and yogurt.

Pour a thin layer of the salsa sauce over the bottom of 10" x 7" casserole dish. The 10x7-inch dish is perfect for corn tortillas, but an 8-inch square baking dish would work as well. Place 1/3 cup of the squash and bean mixture into each tortilla. Top with 1 tablespoon of cheese and roll up. Place seam-side-down in the baking dish. Continue until all the squash mixture is used up. Pour the remaining salsa sauce over the top of enchiladas. Sprinkle with the remaining cheese. Bake at 350 degrees until cheese has melted and starting to brown in places, about 30 minutes. Let cool for 5 minutes. Garnish with cilantro and serve with sour cream and avocado.


So I made these for lunch, but they smelled so good I had to try a bite.  They are beyond delicious!!  The butternut squash is a tad bit sweet and goes great with the cilantro.  Yum!!!  I'm so ready for lunch!!

Great Week

This week has been a great week and it's only Thursday.  Max had been crying every morning when I drop him off at school, because of the fire drill that traumatized him.  This week- NO CRYING!!  Instead he'd look at me and say, "Bye bye Mama! Wuv you!" This made my heart happy, and me want to cry because he was so happy.  It amazes me how much he's talking and singing.  Songs that I would sing to him, he now sings with me.  He has an alphabet book, and he points at things and says what they are.  Last night while reading with his Daddy, he pointed at a picture and said, "oh yo-yo!"  Yo-yo?  I didn't even know he knew what a yo-yo was, but he does!

I went to the specialist yesterday to finally go over my blood work.  He went over each test that was given and explained each one.  It was how Dr. T should have done, but didn't.  I told Dr. P what happened last week and he was shocked that a doctor would do that and he apologized.   I like Dr. P.  Dr. T...not so much.  Anyways, I have to go to another specialists.  Dr. P ruled out any diseases that he deals with, and so I'm off to the next.  My blood work showed that something is definitely going on and causing inflammation throughout my whole body.  I left feeling good. 

Today I had my eye appointment, which I was nervous about because if my retina was still swollen and inflammation was still in my good eye then I was going to have to get a steroid shot in my eye.  Every eye appointment I go to they take pictures of my eye.  Today they took a bajillion of pictures using 3 different machines.  That last one they had to inject dye into my arm and then take pictures to see if there were any tears in my retina.  It makes me see pink and then yellow.  The light was so flipping bright it made me nauseous.  I was seeing red after.  Bright light also hurts my eye when it's dilated.  It almost burns.   Ouch.

The good Dr. B came in and looked at my eye.  Remember I stopped eating meat, chicken, and turkey and other foods to see if it helped with the inflammation.  He checked my eye and he said that my retina was still swollen.  Gulp.  I was waiting for him to say I needed a shot, but he didn't!  He said that the inflammation was GONE and that though my retina was swollen he didn't think I needed the shot.  I just have to stay on the steroid drop, and the one that burns like a mother effer.  I'll take burning drop over shot any day!!    I don't know if changing what I've been eating really caused the inflammation to go away, but just in case I'm going to keep it up for the next 6 weeks.

I took Max for a bike ride, but he's not very good at steering.  He's learning.  

I picked him up from school, and he was tired out from all his fun.

I saw Julie and Julia, and now want to cook from this book.

Football is back!!  With football comes tailgating!  Last year tailgating with Max consisted of him playing in the car and him wanting to wobbly walk around.  This year Max had his own chair, ate all the yummy food that we ate (he loved pepperoni and could have kept eating it), played football with his Daddy, went for a walk to check things out, spilled a few Gatorade, cooled himself down with ice, and just had F.U.N.   We thought for sure he'd tire himself out and then want to sleep during the game.  Um..No.  Max wanted to watch football.  When the people in front of us stood up and blocked his view, he stood up on my lap so he could see.  He lasted almost half of the game, but then wanted to walk around.  He was so tired, but would not fall asleep.  Luckily I ran into a friend who was working the game, and she gave Max a churro.  He ate that yummy goodness up and was happy for about 20 minutes, then it was time to go.  The minute we were in the car, he was asleep. 

He woke up ready to watch the Steelers play some football.  You should have seen him with the Terrible Towel.  He was waving it around, running around yelling, throwing his arms in the air when a touchdown was scored.  It was pure cuteness.  Unfortunately our team lost, which meant Max wasn't happy and Daddy wasn't happy.  :(  There's always next week!


We Are Never Ever Getting Back Together

Dr. T is for TERRIBLE!  Remember when I went to see the specialist, Dr. P, who had me go get blood work.  They took a bajillion vials, and I was surprised I still had blood left.  Then I was asked forced to wait 4 weeks until I get my results.  Actually 3 because I called to see if I could come in earlier, and they are seeing me a whole 6 days earlier.  Hey, I'll take it. 

So Tuesday I got a call from Dr. T's (who I've made it a point not to see because I always leave his office feeling like I'm going to die because he gives me worse case scenarios)  office telling me that Dr. P had sent over my blood work and they were wondering if I've been having headaches.  Well yes I have been.  I'm stressed out about what's going on, so it's all a big headache.  I get a call the next day saying Dr. T wants to see me asap.  Asap to them means next day appointment.  So all day yesterday I was a nervous wreck about my appointment.  It has to be something bad if he wants to see me asap.  Fast forward to this morning.  I was a hot mess.  Nervous.  Couldn't sit still.  I was going to get the results that could possibly tell me what's been causing my eye troubles. 

My appointment was at 8:45, and they took me back at 8:40.  Ohh they were taking me early!  This was off to a good start.  The lady took me back to the room, asked if I wanted a flu shot, and said the doctor would be in shortly.  Lady comes back with the flu shot.  Tells me to relax (easy for her to say, she wasn't waiting to get blood work results), and stabs me with the needle.  Then I waited....and waited.  The good Dr. T comes into the room at 9:31 (I looked at my phone).  He doesn't say, "Hi, sorry for making you wait." or "Hi, how are you?"  Instead he comes in looking at his iPad, and says, "They want you to have ____________ treatment for your eyes."  I put the line because he used some medical gibberish that I didn't catch.  I have no idea what the treatment is, but I just picture thousands of needles being put into my eyes.  Then he says, "Have they gone over this with you."  I have no idea who "they" are, but I tell him that I haven't gone over my blood work results with Dr. P because my appointment is next week.  He then says he wants a second opinion and I have to go to another specialist and have more blood work done.  I told him what Dr. P was looking for and asked if the blood work showed that.  He didn't answer my question or go over my results with me.   I don't even know what the second opinion is for.   So I asked about my blood work again, and he pats my shoulder and says that I should wait for my appointment with Dr. P next week.  Umm,,,,,okay.   He left the room, another lady comes in and takes two vials of blood, then tells me I'm free to go.  I have been waiting, WAITING to hear my results so we can get to the freakin bottom of this, and now they are telling me to wait some more, oh and go see another specialist.   Just what I wanted to do.  This awesome doctor was reading my mind!

I'm so beyond frustrated and over this.  How many doctors do I have to see, and how many vials of blood do I have to give?  It's ridiculous.   I feel like I'm a constant hot mess because of this, and hearing that I need to calm down and not be upset doesn't help.  I'm just so tired and upset about everything.  What's so hard to understand about that?  Please come walk in my shoes and deal with my problems, and have a bajillion vials of blood taken from you, and have to tell your life medical history to doctor after doctor, and still not know what's going on.  It's exhausting.  (The new Taylor Swift song just popped into my head.  I am never ever getting back together with Dr. T. )
